What is commonly referred to as cinnamon is the product derived from cinnamon tree. Cinnamon products exists in several forms.

Cinnamon is split in to two primary categories according to the origin:
Ceylon and
Cassia.
Often referred to as "true cinnamon", Ceylon cinnamon (Cinnamomum Zeylanicum) began the spice trade when it was originally unearthed in Sri Lanka during the age of European exploration.
The cassia category, meanwhile, is broken down in to the three main types:
Cassia,
Saigon and
Korintge.

The name Ceylon Cinnamon derived from the former name of Sri Lanka. It is a very established geographical indication for cinnamon.It is known as Ceylon cinnamon or true cinnamon and it’s healthier and sweeter than other kinds. Even if Sri Lanka produces 90% of the world’s supply, it isn’t found on most peoples spice racks. Instead cheaper inferior alternative called cassia cinnamon, dominates the world market, as its easily grown throughout south east Asia. A lower quality kind cassia it can be unhealthy in large amounts, but it is up to 10 times cheaper, so it dominates the global market.
Cinnamon is the most important and valuable spice produced in Sri Lanka.
Sri Lanka produces around 22 metric tons of cinnamon every year.
Cinnamon was one of the first traded spices of the ancient world. It was once more valuable than Gold. when trade became an important source of revenue, spices were considered the most important merchandise and cinnamon was the most important of it all. 3000 years old evidence of cinnamon trading was found during excavations in Tel Dor. Suggesting the possibility of the long range spice trade from the Far East westward having taken place some 3000 years ago. Cinnamon has motivated many historical voyages leading to discovery of new world by Christopher Columbus and Vasco de Gamma to South India and Sri Lanka.
Many merchants around the world had been coming through the route of the great tasty smell. They found the hidden secret and took it to the world. They also found this invaluable plant can’t be grown to its original quality in anywhere else in the globe. Time to time they kept this isle, so called Ceylon, under captivity mainly to harvest this invaluable plants.
Ceylon cinnamon or true cinnamon contains ultra-low level of coumarin than cassia.
Ceylon cinnamon has several health benefits such as boosting the immune system, lowering blood pressure and stabilizing blood sugar. Cassia contains high levels of a compound called coumarin. It can cause liver damage if consumed in high doses. Coumarin is an aromatic chemical compound that is known to possess hepatotoxic and carcinogenic properties. Cassia can have 250 times more of it than Ceylon cinnamon.
On February 2, 2022, Sri Lanka achieved a historic milestone by receiving its first-ever Geographical Indication (GI) certification from the European Union (EU) Commission.
